eraj Jayawickreme, Fairmont Olympic’s Director of culinary, brings bold creativity to all food and
beverage outlets, including The George’s Paci昀椀c Northwest brasserie menu. With a passion for
hyper-seasonal ingredients and partnerships with local farmers and purveyors, Eraj has rede昀椀ned
the culinary experience at Fairmont.
eraj’s journey into cooking began at age 10, inspired by early ’90s cooking shows and nurtured
by parents who valued food and hard work. His 昀椀rst culinary experiments were limited to an
electric skillet, but by age 13, he was determined to become a chef. At 15, he joined Toronto’s
king edward Hotel, gaining foundational skills and a deep respect for food that continue to shape
his philosophy.
With over 30 years of experience, including running his own modern kitchen concept, eraj’s style
blends discipline, teamwork, and classic 昀氀avors.
At Fairmont Olympic, he oversees 昀椀ve outlets, room service, events, and sustainability
initiatives like the rooftop garden and honeybee apiary.
eraj’s food philosophy is simple:
“Respect the things you eat, and the people you feed.” known for his humor and humility, he
believes in creating dishes that delight nine out of ten people - because, as he jokes, the tenth
might have ruined their appetite before supper.
